Banchan is a fascinating aspect of the Korean cuisine. They are small side dishes they serve along every meal and they can be made from anything you can imagine. Today I am sharing you my recipe for one banchan: seasoned cucumber or oi muchim. (오이 무침)
The day that I made my beachu kimchi I made another type of kimchi as well: kkakdugi (깍두기) or radish kimchi. This kimchi is a lot easier and faster to make than its famous cousin so it is a great kimchi to make for beginners like myself.
